Chicken Fajitas on table with guacamole and chilli; for those quick mid-week meals
Quick & Easy Chicken Fajitas
Total Time 20-30 Minutes. Serves: 4-6
1 red capsicum, sliced into thin strips
1 green capsicum, sliced into thin strips
1 yellow capsicum, sliced into thin strips
1 red onion, sliced
2 chicken breasts, thinly sliced
1 clove garlic, crushed
½ teaspoon salt
1 teaspoon smoked paprika
1 teaspoon sweet paprika
½ teaspoon cumin
¼ teaspoon dried chilli (optional)
Tub of guacamole
1 small tub of sour cream, or Greek yoghurt.
1 jar of Mexican salsa
100 g, grated cheddar cheese
Bunch chopped coriander. (optional)
4-6 large tortilla
How to Make It
Place the chicken, capsicum, onion, garlic in a bowl with the salt, paprika, chilli and cumin and squeeze over the lime juice. Leave 5 minutes to marinate.
Add olive oil to large frying pan or wok. Add the chicken and capsicum and onions. Cook until chicken is golden and cooked through. Keep stirring the ingredients around so they don’t burn.
Warm up the tortillas in a microwave or in the oven, as per directions on the packet.
Serve the chicken and vegetables at the table, with the tortillas, guacamole, Mexican salsa, sour cream, grated cheese and chopped coriander.
